Ingredients
- 500 g potatoes
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 green chili, a thumb of ginger and 3 garlic cloves, finely chopped
- ½ tsp turmeric
- A handful of coriander, chopped
- 100 g gram flour (besan)
- Salt and a pinch of chili powder
- 4 soft buns (pav)
- Green chutney: coriander, 1 green chili, lemon juice, salt
- Oil for frying
Steps
- Boil the potatoes until soft, then peel and mash.
- Heat the oil, add the mustard seeds until they pop, then the chili, ginger, garlic and turmeric for 30 seconds.
- Mix this into the potatoes with salt and coriander. Shape into 4 balls.
- Whisk the gram flour with salt, a pinch of turmeric and chili powder and water into a thick batter.
- Dip each ball in the batter and fry at 175°C for 3–4 minutes until golden.
- Blend the chutney ingredients with a splash of water.
- Slit the buns, spread with chutney, tuck in a hot vada and press.
Momo's tips
- Let the mustard seeds pop before adding the rest: that's where the flavour comes from.
- Keep the batter thick so it coats the potato ball in one dip.
- Serve right away while the vada is crispy.
Handy to have
