Ingredients
- 400 ml cream
- 4 egg yolks
- 80 g sugar (50 g for the custard, 30 g for the top)
- 1 tsp vanilla extract or a packet of vanilla sugar
Steps
- Heat the oven to 150°C (130°C fan). Warm the cream with the vanilla until steaming, but don't let it boil.
- Whisk the egg yolks with 50 g sugar until pale.
- Slowly whisk the hot cream into the yolks, then strain.
- Pour into 4 ramekins in a deep tray and add hot water halfway up the sides.
- Bake for 30–35 minutes until set with a slight wobble. Cool, then chill for at least 3 hours.
- Sprinkle a thin layer of sugar on top and torch it (or grill it) until deep amber. Let it harden for a minute, then crack in.
Momo's tips
- Pour the hot cream in slowly so the yolks don't scramble.
- A water bath keeps the custard silky.
- A thin, even sugar layer gives the best crack.
Handy to have
- Ramekins
- Kitchen blowtorch
- Fine sieve
