Ingredients
- 100 g dark chocolate (about 60–70%)
- 50 g butter, plus a little for the ramekins
- 2 eggs
- 40 g sugar
- 15 g flour
- A pinch of salt
- Cocoa powder for the ramekins
- Icing sugar to dust
Steps
- Heat the oven to 220°C (200°C fan). Butter two ramekins (about 180 ml) and dust them with cocoa.
- Melt the chocolate and butter together over a pot of simmering water or in short bursts in the microwave.
- Whisk the eggs and sugar for 2–3 minutes until pale and thick.
- Fold in the melted chocolate, then the flour and salt, just until smooth.
- Divide between the ramekins and bake for 10–12 minutes, until the sides are set but the middle still wobbles.
- Rest for 1 minute, run a knife around the edge and turn out onto plates. Dust with icing sugar and serve right away.

- Take them out while the middle still wobbles: that's the lava.
- Butter and cocoa in the ramekins make them slide out cleanly.
- Serve straight away; the centre keeps cooking as it sits.
