Ingredients
- 2 large onions
- 150 g flour
- 1 tsp paprika and a pinch of salt
- 1 egg
- 120 ml milk
- 80 g panko breadcrumbs
- Oil for frying
- Ketchup to serve
Steps
- Slice the onions into 1 cm rings and separate them.
- Mix 100 g of the flour with the paprika and salt. Toss the rings in it.
- Whisk the egg, milk and remaining flour into a smooth batter.
- Dip each floured ring into the batter, then press it into the panko.
- Fry at 175°C for 2–3 minutes until deep golden. Drain on a rack and salt right away.
- Serve hot with ketchup.
Momo's tips
- Flour first, then batter, then panko: the dry flour layer helps everything stick.
- Fry in small batches so the oil stays hot and the rings stay crunchy.
- Salt them the second they come out of the oil.
Handy to have
- Heavy pot (Dutch oven)
- Frying thermometer
- Wire rack
