Ingredients

  • 125 g low-moisture mozzarella block, cut into 4 sticks
  • 2 Wiener sausages, halved
  • 4 wooden skewers
  • 125 g flour
  • 1 tbsp sugar, plus extra for rolling
  • 1 tsp baking powder
  • A pinch of salt
  • 1 egg
  • About 100 ml milk
  • 60 g panko breadcrumbs
  • Oil for frying
  • Ketchup and mustard

Steps

  1. Thread half a sausage and a mozzarella stick onto each skewer. Freeze for 15 minutes so the cheese doesn't leak.
  2. Whisk the flour, sugar, baking powder and salt, then add the egg and milk to make a thick, sticky batter. Pour it into a tall glass.
  3. Dip each skewer into the batter and twist to coat it evenly.
  4. Roll it in panko, pressing so the crumbs stick.
  5. Fry at 170–175°C for 3–4 minutes, turning, until deep golden. Drain on paper towels.
  6. Roll in sugar while hot, then zigzag with ketchup and mustard.

Momo's tips

  • Freeze the skewers for 15 minutes so the mozzarella stays inside while frying.
  • Keep the batter thick: it should cling to the skewer, not run off.
  • Watch the oil temperature: too hot and the outside burns before the cheese melts.
