Ingredients
- 500 g baby potatoes
- 30 g butter, melted
- 2 tbsp olive oil
- 3 garlic cloves, finely chopped
- 30 g Parmesan, finely grated
- A little fresh parsley, chopped
- Salt and black pepper
Steps
- Boil the potatoes in well-salted water for 15–20 minutes until a knife slides in easily. Drain and let them steam-dry for a few minutes.
- Heat the oven to 220°C (200°C fan). Brush a baking tray with a little olive oil.
- Put the potatoes on the tray and press each one flat to about 1 cm with the bottom of a glass.
- Mix the melted butter, the rest of the olive oil and the garlic. Brush it over the potatoes and season with salt and pepper.
- Bake for 20–25 minutes until the edges are deep golden and crispy.
- Scatter the Parmesan over, bake 3–4 minutes more until melted, then finish with parsley.
Momo's tips
- Let the boiled potatoes steam-dry: drier potatoes get crispier.
- Smash them thin so there are lots of craggy edges to crisp up.
- Add the Parmesan at the end so it melts instead of burning.
