Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, chopped
- 1 tsp cumin, 1 tsp paprika, a pinch of chili flakes
- 400 g canned chopped tomatoes
- 4 eggs
- 50 g feta
- A little fresh parsley
- Salt
- Bread for dipping
Steps
- Soften the onion and pepper in the olive oil for 5–6 minutes.
- Add the garlic and spices and stir for 1 minute.
- Add the tomatoes and a pinch of salt and simmer for about 10 minutes until thick.
- Make 4 little wells in the sauce and crack an egg into each.
- Cover and cook on low for 5–7 minutes, until the whites are set but the yolks are still runny.
- Crumble over the feta, scatter parsley and serve straight from the pan with bread.
Momo's tips
- Let the sauce get thick before adding the eggs, or they'll sink and spread.
- Put a lid on: the steam sets the whites while the yolks stay runny.
- Serve straight from the pan with plenty of bread.
Handy to have
- Cast-iron pan
