Ingredients
- 500 g boneless chicken thighs, in chunks
- 100 g plain yogurt
- 1 onion, finely chopped
- 3 garlic cloves and a thumb of ginger, grated
- 2 tsp garam masala, 1 tsp mild chili powder, 1 tsp cumin, ½ tsp turmeric
- 400 g tomato passata
- 100 ml cream
- 30 g butter
- Salt
- 250 g basmati rice
Steps
- Mix the chicken with the yogurt, half the garlic and ginger, half the spices and a pinch of salt. Marinate for at least 30 minutes.
- Sear the chicken in a hot pan with a little butter until charred in spots. Set aside.
- In the same pan, soften the onion in butter, then add the rest of the garlic, ginger and spices for 1 minute.
- Add the passata and simmer for 10 minutes. Blend smooth if you like.
- Stir in the cream, add the chicken back and simmer for 10 minutes.
- Finish with the last of the butter and serve over basmati rice.
Momo's tips
- Marinate in yogurt: it keeps the chicken tender and helps it char.
- Bloom the spices in butter for a minute before adding the tomato.
- Add the cream off the boil so it stays smooth.
Handy to have
- Large frying pan
- Stick blender
