Ingredients
- 200 g spaghetti
- 6 garlic cloves, thinly sliced
- 80 ml (1/3 cup) extra-virgin olive oil
- 1/2 tsp (more if you like it hot) red chili flakes
- a small handful fresh parsley, chopped
- 1 tbsp salt, for the pasta water
Steps
- Boil a large pot of water with the salt. Cook the spaghetti for 1–2 minutes less than the packet says.
- While it cooks, put the olive oil and sliced garlic in a large cold pan. Heat on medium-low for 3–4 minutes until the garlic is pale golden.
- Add the chili flakes and stir for 20–30 seconds.
- Scoop out a cup of pasta water, then move the spaghetti straight into the pan with tongs.
- Add about half a cup of pasta water and toss over medium heat for 1–2 minutes until the sauce turns glossy and clings to the pasta. Add a splash more water if it looks dry.
- Take the pan off the heat, toss in the parsley, taste for salt and finish with a small drizzle of olive oil.
- Serve right away.
Momo's tips
- Starting the garlic in cold oil lets it flavour the oil slowly without burning.
- Golden, not brown: burnt garlic turns the whole dish bitter.
- The starchy pasta water is what turns oil into a silky sauce, so don't skip it.
