Ingredients
- 200 g wheat noodles
- 4 garlic cloves, finely chopped
- 1 tbsp chili flakes
- 1 tsp sesame seeds
- 2 spring onions, whites and greens separated
- 1 tsp sugar
- 2 tbsp soy sauce
- 1 tbsp black vinegar (or rice vinegar)
- 60 ml neutral oil
Steps
- Cook the noodles as the packet says, then drain.
- In a heatproof bowl, add the garlic, chili flakes, sesame seeds, spring onion whites and sugar.
- Heat the oil until it shimmers (about 180°C) and pour it over the bowl. It will sizzle loudly.
- Stir in the soy sauce and vinegar.
- Toss the hot noodles in the sauce and top with the spring onion greens.
Momo's tips
- Use a heatproof bowl and pour the oil carefully: it should sizzle, not smoke.
- Chop the garlic finely so it toasts instantly in the hot oil.
- Add a splash of noodle water if the noodles look dry.
Handy to have
- Large frying pan
